What you receive

Every order is a split quarter — a mix of cuts from both the front and rear of the animal, not just one traditional quarter. Expect roughly half ground beef, plus rib, loin, and sirloin steaks, chuck and rump roasts, stew meat, and — if you want them — soup bones and organs.

The exact mix depends on your cutting instructions and the individual animal. More boneless cuts or more ground beef changes what you take home.

What the price includes

Slaughter, standard processing, standard aging, cutting to your instructions (or the standard cut), grinding, packaging, labeling, and freezing.

Extra: hamburger patties, hot dogs, summer sausage, snack sticks, specialty sausage, smoking or curing, and other nonstandard processing. You only pay for what you ask for.

Pick your steak thickness, roast size, ground beef package size, and whether certain cuts go to steak, roast, or grind. Or skip all of that and take the standard cut — it's a genuinely good, no-decisions household assortment, and it's what most first-time buyers choose.

Is a quarter right for you?

Good fit: a two-person household that eats beef regularly, a family stocking up for the season, two households splitting one order, or anyone with 3–4 cubic feet of open freezer space.

Not a fit if you want only steaks, only ground beef, or an exact packaged weight. Buying the whole animal means you get a range, not a fixed order.
